Vegan Quinoa, Spinach, Pomegranate & Pecan Salad

Full of texture, flavour, filling and absolutely delicious! This vegan salad has Pecans, Quinoa, Spinach, and Pomegranate 🥗

Ingredients;
For the salad:
- 250g Quinoa (You can eat this one cold)
- 1 Pomegranate
- Handful Pecans
- 1 Avocado
- 200g Organic Spinach
- Handful Basil
For the dressing:
- 1 Lemon, juiced
- 2 Tbsp Extra Virgin Olive Oil
- 2Tbsp Pomegranate Molasses
- 2 Garlic Cloves, minced
- Salt and Pepper (to taste)
Method;
- Remove the seeds from the pomegranate, and dice the avocado, and chop the basil to prepare
- Mix the salad ingredients in a medium sized bowl
- Then, to make the dressing, whisk the ingredients in a small bowl
- Pour the dressing over the salad and toss
- Serve and enjoy!
