Sweet Orange Red Cabbage
A festive treat to compliment your Turkey on Christmas day. This red cabbage is cooked in fresh squeezed orange juice to make Christmas day just that much sweeter!

Ingredients;
- 1 Red Cabbage
- 30g Butter
- 2 Red Onions
- 1 Orange
- 2 Tbsp Sugar
- 1 Cinnamon Stick
- 150ml Red Wine
- 1 Tbsp Red Wine Vinegar
- 200 ml Water
Method;
- Peel off the outer leaves of the red cabbage, then cut into quarters and remove the core
- Use either a mandoline or a very sharp knife to carefully finely slice the cabbage
- Finely chop the red onion and gently fry until soft
- Zest the orange and add to the onions with the cinnamon stick and sugar. Cook for 1 minute
- Add the cabbage, then pour over the red wine, red wine vinegar, the juice of the zested orange, and water
- Bring to the boil, then reduce the heat and simmer covered for about 1 hour until softened
- Serve with your favourite roasted meats and enjoy
