Prawn Laksa Curry
This prawn laksa curry is so healthy and so filling! This one is really fresh and fragrant and would be a great dinner party dish to wow your guests.

Ingredients;
- 250g raw king prawns
- 400ml coconut milk
- 150g rice noodles
- 1 red chilli, finely sliced
- 2 tbsp Thai red curry paste
- 650ml vegetable stock
- 2 tsp fish sauce
- 2 limes, 1 juiced, 1 quartered
- 1 tbsp olive oil
- Handful of coriander, roughly chopped
Method;
- In a large wok, heat the oil and fry off the chilli for a few minutes, then add in the curry paste and fry for a further minute
- Pour in the vegetable stock, stir until combined. Add in the coconut milk, stir and bring to the boil
- Add in the fish sauce and noddles, cooking for 4-5 minutes until the noddles are cooked, reduce the heat to a simmer
- Add in the lime juice and prawns, cook until the prawns turn pink, around 4 minutes the stir in half the coriander
- Serve in a deep bowl, top with the remaining coriander and a lime wedge
