This prawn laksa curry is so healthy and so filling! This one is really fresh and fragrant and would be a great dinner party dish to wow your guests.

  • In a large wok, heat the oil and fry off the chilli for a few minutes, then add in the curry paste and fry for a further minute
  • Pour in the vegetable stock, stir until combined. Add in the coconut milk, stir and bring to the boil
  • Add in the fish sauce and noddles, cooking for 4-5 minutes until the noddles are cooked, reduce the heat to a simmer
  • Add in the lime juice and prawns, cook until the prawns turn pink, around 4 minutes the stir in half the coriander
  • Serve in a deep bowl, top with the remaining coriander and a lime wedge
