Honey roasted Heritage carrots with thyme
It's carrot season, and we love them every which way - boiled, mashed, steamed, grated and fried in fritters, but our new in Heritage rainbow carrots are best served roasted with honey, scattered with thyme and are pretty as a picture.
Ingredients
- 500g Heritage rainbow carrots
- 2 tbsp EV olive oil
- 2 tbsp honey
- Small handful of picked thyme leaves
- salt and pepper to taste

Preheat the oven to 180, line a baking tray with foil and brush with olive oil

Arrange the carrots in a single layer on the prepped tray

Mix the olive oil, honey, salt and pepper in a bowl, pour over the carrots and toss to coat.

Roast in the for 25-35 minutes or until carrots are tender and browned. Roasting time may vary depending on the size of the carrots.

Remove from the oven, sprinkle with the thyme leaves & serve immediately
