Ingredients:

  • 1 large baking potato per person
  • Rock salt

Method:

  • Preheat your oven to its 250 degrees 
  • Grind up a small handful of rock salt in a pestle & mortar
  • Run your potato under the tap so the whole thing is damp 
  • Cover it in salt, it will seem like it's too much but you will tap it off at the end
  • Place the salt covered potato directly onto the oven rack and cook for 1 hour on the highest heat (if it's massive you may want to do it for an extra 10-15 mins but as a rule an hour works)
  • Careful take your potato out of the oven using a clean tea towel and put on a board, then with the potato covered by the tea towel, give it a good tapping to knocking off the salt layer
  • Slice through the crispiest of skin to reveal a fluffy innard 
  • Add butter and mash into the potato flesh then top with whatever you fancy
