Fool-proof baked potatoes

Ingredients:
- 1 large baking potato per person
- Rock salt
Method:
- Preheat your oven to its 250 degrees
- Grind up a small handful of rock salt in a pestle & mortar
- Run your potato under the tap so the whole thing is damp
- Cover it in salt, it will seem like it's too much but you will tap it off at the end
- Place the salt covered potato directly onto the oven rack and cook for 1 hour on the highest heat (if it's massive you may want to do it for an extra 10-15 mins but as a rule an hour works)
- Careful take your potato out of the oven using a clean tea towel and put on a board, then with the potato covered by the tea towel, give it a good tapping to knocking off the salt layer
- Slice through the crispiest of skin to reveal a fluffy innard
- Add butter and mash into the potato flesh then top with whatever you fancy
