Claire Fleming's Banana Bread
It seems the whole of the UK is going crazy for banana bread at the moment, but you haven't tried banana bread until you have tried this recipe!

Ingrediants
200g Over Ripened Banana
200g Caster Sugar
100g Whole Egg
200g Plain Flour
8g Baking Powder
25ml Vegetable Oil
50ml Milk
Crumble mix for topping
100g Plain Flour
50g Unsalted Butter (cubed)
50g Caster Sugar
1) Pre heat the oven at 150*C
2) Butter and line a loaf tin with Grease proof paper
3) Beat the Banana and sugar together in a mixing bowl until combined and a smooth puree
4) Mix in the egg
5) Sieve in the Flour and baking powder and combine with the banana mix
6) Add your milk and Vegetable oil until you have a smooth cake batter
7) For the Crumble topping in a bowl place the Flour, Butter and sugar and rub together create a crumble texture
8) Pour the Banana cake mixture into the tin and sprinkle some of the crumble mix on top
9) Place in the oven an cook for 1 hour,
10) Take out of the oven once cooked and remove from tin and place on a cooling rack
11) Enjoy with a coffee or even a ball of vanilla ice cream
