Savoury pancake cannelloni
Lemon and sugar, nutella and banana and all the other usual suspects will definitely be making an appearance on Shrove Tuesday tables up and down the country, so we thought we'd inspire you to do something a bit different with a savoury pancake cannelloni.
Ingredients:
- 6 pancakes (easy recipe here)
- Bag of spinach (mine was 180g and young leaf)
- 1 Onion
- 30g butter
- 3/4 tub of cream cheese (you could probably get away with 1/2)
- Lump of hard cheese grated, whatever you’ve got, enough to cover the top of your “cannelloni”
- Tub of ready made tomato pasta sauce or 300ml of multi purpose marinara
Method:
- Preheat the oven to 200 (180 if gas)
- Melt the butter in a large frying pan and fry the onions until soft and caramelised
- Add the spinach to the pan and fry until completely wilted
- Take off the heat and stir in the cream cheese until thoroughly combined
- Spoon onto the pancakes and roll up
- Spoon the tomato sauce over the bottom of the dish, line up the pancakes on top of it, then spoon the rest of the sauce on top and cover with the grated cheese
- Bake in the oven until the cheese is golden and bubbling, then serve immediately
