Amaretti biscuit Tiramisu
We've just started stocking Amaretti biscuits so couldn't resist rustling up a boozy tiramisu with them. The beauty of this dessert is that it can be made a day in advance and popped in the fridge until you need it!
Ingredients (makes 6-8 portions depending on dish size)

3 Tbsp. dark rum (or whatever booze you fancy)

¼ tsp. salt

1 cup espresso or very strong coffee

1 bag amaretti biscuits (reserve a small handful to crush for topping)

2 Tbsp. unsweetened cocoa powder
Method:

Whisk egg yolks to blend, then gradually add sugar, whisking constantly until mixture is thick, smooth, and pale yellow.
- Using a rubber spatula, gently fold in mascarpone, rum, and salt; set aside.

Place espresso in a small bowl. Working in batches, gently mix and turn cookies in espresso 20 seconds to soak. Divide cookies among glasses and top each with ½ cup mascarpone mixture. Chill at least 1 hour.
- Dust with cocoa powder and/or a small handful of crushed amaretti
